    Our Black Truffle infused EVOO has been created in tandem with Paolo Montanaro, president of the Italian Truffle Society in Alba, Italy. Paolo’s black truffle oil beautifully captures the essence and earthy aromas of a freshly foraged black winter truffle. The black winter truffle is earthy, mushroomy and less intense in flavor than its white truffle counterpart, which makes this Black Truffle infused EVOO chefs' favorite oil for risotto, eggs, steak and Mushroom-Gruyere pizza.     When you first taste our Champagne White Wine Vinegar, you’ll instantly fall in love with its smooth and elegant flavor. That’s due in part to the way in which it is produced. Unlike other Champagne vinegars, this one never undergoes a pasteurization process. By eliminating this step, the vinegar possesses a lovely, rich base.   Notes: Imported from the Champagne region of France, the vinegar is a divine ingredient in salads, or try in homemade mayonnaise; simply whisk with extra virgin olive oil, eggs and mustard.

    This is a very nice well-rounded oil with a great combination of the typical Arbequina flavors harvested on the early side. It has a strong, clean, crisp aroma of green apple and flowers. The flavor has both the green apple and ripe apple characteristics, but also the nutty, buttery, and tropical fruit flavors expected in an Arbequina oil. It has many complex herbaceous flavors too of green olive fruit, fresh cut grass, mint, and black pepper. The balance is perfect with strong fruitiness, mild bitterness, and an appropriate zing of spicy pungency.

    The aroma of this oil has that wonderful herbaciousness of green Picual. It is a medium-robust oil that is nicely balanced with intensive fruitiness medium bitterness, and medium pungency. It is complex with some light, but surprising ripe tropical fruit flavors along with some nuttiness and butteriness, which gives it a rounded mouth feel. This oil also has what is expected in a green Picual, which is the typical herbaceous spiciness along with a long list of green leafy undertones of artichoke, green apple, green banana, green tea, mint, nettle, and tomato leaf. It ends with a bit of woodiness and black pepper finish.
